The streets of Fuse are crisscrossed with shopping arcades.
Children run and bicycles slip under the arcades.
The smell of freshly fried croquettes and the call of the greengrocer. Everywhere you turn, you can hear the sounds of daily life.

Nissin Shokudo is located in a quiet alley slightly off such a street.

Nissin Shokudo was founded more than 80 years ago.
Today, the restaurant is run by a mother and daughter, a three-person team.

While the restaurant has the calmness of an old-fashioned teishoku-ya, one is a bit surprised by the large number of small bowls of food.
The small bowls of food come on a tray and are served with the words, “Here you go, too. The first four items were cold boiled vegetables, a little bit sweet and a little bit spicy.

All of these dishes are thought up daily by the daughter, and the menu changes with the seasons.
The vegetables they use are purchased from a nearby green grocer.

The miso used for konnyaku dengaku is made by blending several kinds of miso.
The sweetness, richness, and savory aroma of the miso combine to create a fluffy taste in the mouth.


The set meal is the embodiment of such a feeling.

The star of the show is the dashimaki tamago (rolled egg)!

The main dish of the day was dashimaki tamago (rolled egg).
When the softly rolled egg is cracked open with chopsticks, dashi broth oozes from the inside.

The egg is well seasoned, yet it is gentle on the palate, and somehow calming.
The miso soup and rice are a perfect complement to this dish.

When you have finished eating, the last small bowl of vegetable tempura appears.
The tempura is freshly fried and so light that it makes a crispy sound.
This may be what they mean when they say “a final treat.

A set restaurant in the town, a place in the town

Some of the regulars come here almost every day.
The main dish is the same, but the small bowls of food change, so I never get tired of it,” laughs an elderly lady.
