As I walk through Fuse at night, I catch a sudden glimpse of light coming from deep inside an old building. The sign is a large traffic cone set up in front of the shop. On days when it’s there, it’s a sign that Pass is open.
When I open the door, I’m greeted by a whimsical interior and the owner, Mocchi-san, with her gentle smile.
While there is a menu here, the dish you order may not necessarily be what you get. Instead, the dish that arrives is inspired by the season, the chef’s mood, and the atmosphere of the night. Yet even those in the Fuse food and beverage scene give it their stamp of approval, calling it “the best.”
“An evening where you can enjoy the unpredictability.” That’s what Pass is all about.

The answer lies in a place that isn’t signposted
When you visit Pass for the first time, you might get a little lost. It’s down a side street off the main road, tucked away in a room at the back of an old building. There’s no sign. Instead, a giant traffic cone next to the entrance quietly lets you know, “We’re open today.”
It’s hard to walk in. But I want to go in. This conflicting feeling is kind of fun.
The moment you open the door, the confusion you felt outside melts away as if it were a lie. The floor, the walls, and the lighting—everything has been personally touched up by the owner, Mocchi-san. It’s not too polished, yet it’s not sloppy either. That “just-right” vibe is strangely soothing.
“A space that doesn’t feel contrived.” That might be the first dish.
There’s a menu, but you won’t decide based on it
Pass does have a menu. But it’s best to think of it merely as a general guide.
Some days, what you order comes out exactly as you asked; other days, it arrives in a slightly different form. It’s not so much a matter of strict adherence to a style as it is about leaving room for interpretation. The flavor of Mocchi’s dishes changes depending on the day’s ingredients, the temperature, the expressions of the diners, and even the slightest shift in the atmosphere.
Take pasta, for example. It might be a tomato-based sauce, or it might be simply dressed with olive oil. If you’re in the mood for a little adventure, go for the owner’s “chef’s choice” pasta.
No explanation is needed. You’ll just take a bite of the dish and think, “This is the perfect choice for today.”
Changing Things to Keep Going
The name “Pass” has a meaning. Mocchi used to run a bar here called “Cucumbar.” “Pass” embodies the significance of those days.
Many people in the same industry visit “Pass.” It’s the kind of food that people in the food and beverage business “want to pay for out of their own pocket after work.” I think that’s a truly sincere compliment.
Not letting go of the past, yet never standing still. I feel like this name quietly tells that story. Changing in order to continue. That’s probably why “Pass” is open again today.
A place to be on nights with a little breathing room
“Pass” doesn’t have to be for a special night. It doesn’t have to be a birthday, and it doesn’t have to be an anniversary.
It’s just perfect for those moments when you’re thinking, “I want to make tonight a little special.”
After you finish eating, a quiet afterglow lingers. It might be less about the taste of the food and more about the comfort of the time you spent there. It’s a place you stumble upon while still feeling a bit lost. But by the time you head home, your uncertainty will surely have faded a little.
