At the end of the downtown shopping district, authentic black vinegar awaited us. [Fuse No. 1 | Chinese & Taiwanese Cuisine]
There are nights when I find myself muttering, “Is this really China?” “Fuse 1-ban,” tucked away in a back alley in front of Fuse Station, is a Chinese restaurant that exudes an authentic foreign atmosphere. Yet, the everyday life of this town is firmly rooted there.

Just Beyond the Shopping District Lies a Little Piece of a Foreign Land

Fuse, Higashiosaka. Just off the station area, a red sign suddenly catches your eye. The shop, named “Fuse Ichiban,” is located on the site of the former “Da Ryu Hanten,” a local favorite once known as the “neighborhood Chinese restaurant.”
As you open the door, the scent of spices and the sound of Chinese conversation gently waft into your ears. The steam drifting through the interior and the presence of the owner standing beyond it all evoke a sense of a foreign land. Yet, the atmosphere feels somehow gentle—surely because this town has always naturally embraced such things.
Putting down your chopsticks to eat sweet and sour pork with a knife and fork

One of the signature dishes is “Sweet and Sour Pork with Black Vinegar.” The plate brought to the table features three large chunks of meat, glistening with a glossy black vinegar sauce, arranged neatly side by side. The cutlery provided is, surprisingly, a knife and fork.

When you cut into it, the cross-section is a surprise. Inside, it’s not ground meat, but chunks of braised beef shoulder. It falls apart tenderly while retaining a firm texture. The depth and aroma of the black vinegar bring out the meat’s natural sweetness. The only sides were lightly fried onions and potatoes. In its unpretentious simplicity, I sensed the authentic atmosphere of the place.

It looked substantial, but when I took a bite, it was surprisingly light and seemed to melt right into my body. It was like a foreign dining table set only on nights when I was feeling a little tired.
A little journey awaits at the tip of your spoon
“Daoxiao Mian” and “Lu Rou Han.” Both are dishes that exude an “authentic” vibe.

Originating in Shanxi Province, Daoxiao Mian is characterized by its irregular shape and chewy texture, created by shaving the dough with a knife. The crimson broth is packed with the heat of chili oil, and the moment you slurp it up, beads of sweat start to form.

But it’s not just spicy—there’s a rich depth of flavor beneath the heat. As you slurp away, lost in the moment, a thought suddenly slips out.
“Wait, am I in China?”
That’s how authentic the aroma and heat are—just like the real thing. Even though I’m not actually traveling, it feels like I’ve stopped by somewhere along the way.

The Lu Rou Han is another unforgettable dish. The sweet-and-spicy braised pork belly is topped with the subtle fragrance of six-cornered ginger. Its slightly distinctive aroma actually whets your appetite even more.
I stick my spoon into the bowl and take a big bite. My mouth fills with the spices, the savory richness of the meat, and an indescribable sense of happiness.

“Delicious” just doesn’t do it justice. But I guess this is the kind of flavor that speaks for itself, even without words.
The reassuring feeling of knowing a set meal is waiting for you in the evening

Inside, there are counter and table seats, and the second floor is spacious enough for banquets. Yet, the atmosphere remains thoroughly down-to-earth. It’s the kind of place you can drop by casually, without feeling the need to put on airs.
I especially love the late afternoon hours. It’s a sight to see the regulars, fresh from work, sitting down still in their work clothes and quietly tucking into their set meals. Set meals featuring fried chicken, mapo tofu, or stir-fries—each one is warm and truly satisfies your hunger.

The sound of pots and pans comes from the kitchen. Beyond the rising steam, the owner silently finishes preparing the dishes. As I gaze absently at this scene, I think to myself, “Ah, this place is truly a part of this town now.”

There’s nothing special about it. But it really touches your heart. The fact that a place like this exists is what sustains my everyday life.
Another bowl, amidst the blend of everyday life

The town of Fuse has long naturally embraced “blending.” Due to its history of numerous small local factories, people with foreign roots gathered here and continue to make their lives here today.
It also shares deep ties with the neighboring Ikuno Ward; as you walk down the street, Vietnamese and Chinese signs blend seamlessly into the shopping district’s scenery.
This isn’t something so novel that it can be summed up with a word like “multicultural.” Rather, it’s rooted here as a quiet, everyday reality—something you simply notice is there.

“Fuse Ichiban” is part of that landscape. Without being overly assertive, it still delivers a taste of a foreign land through its aroma and flavor. Every time I scoop up a spoonful, I feel as if I’m on a journey—just a little bit. Yet, it’s firmly an extension of everyday life.
I never thought ordinary Chinese food could feel so natural to me. I think it’s probably the atmosphere of this town that makes it so.

You don’t have to talk to anyone. A single spoonful has its own story to tell. Nights like that exist in Fuse. And I’m sure I’ll find myself wanting to drop by again someday.
