“I don’t cook it myself, but I’m confident in my eye for selecting it,” the shop owner says with a laugh.

Saltiness, flavor, texture—after discerning the “unique qualities” of each, he makes selections that “bring out the best” in them. His suppliers are all processing companies he has trusted for many years.Even though the products aren’t homemade, the flavors carry a distinct consistency unique to this shop.

Whether sold by weight or pre-packaged, the tsukudani is carefully de-aerated for each order and wrapped in a paper bag. Every step of the process exudes the unpretentious grace of a true craftsman.

An Unchanging Vision for Over Half a Century

The owner came to Osaka in Showa 37, after graduating from junior high school. His first job was at a kelp shop in the Fuse Public Market. He began helping out at his brother-in-law’s shop, and before he knew it, it had become his own.

He has been studying kombu at this very spot for over 50 years now. Unassuming yet indispensable—that is the kind of shop you’ll find here.

“Shimeji Shigure” serves as the shop’s calling card
