As I walk through the town of Fuse, there are moments when time suddenly seems to slow down. I’m sure it’s the same when I stand in front of Fuku Sushi. There’s no flashy sign—just a noren curtain fluttering in the breeze.

Since Showa 9, it’s been here in this town, serving the same flavors all along. Today, once again, I’ll savor the hakozushi—a specialty born in Osaka—at a leisurely pace.

A Long-Standing Institution in Fuse, Closely Tied to Daily Life

On Fuse’s main street, “Honmachi-dori Shopping Street,” nestled within the bustling arcade, there is one shop that stands out for its quiet atmosphere: Fuku Sushi. Established in Showa 9, it is Fuse’s oldest sushi restaurant.

The exterior of the shop is surprisingly unassuming, and the sign isn’t flashy. Yet, it truly embodies the “everyday life of the town.”

Behind the noren curtain lies a counter that has remained unchanged over the years. And there, you’ll find the familiar faces of regulars who have been coming here for years.

This restaurant isn’t a tourist attraction. But it’s a place where you can quietly sense the rhythm of the town.

Hakozushi: A Beautiful Layering of Time

When you visit Fuku Sushi, start with the hako-zushi.

Vinegared rice and fillings are carefully layered and pressed firmly into a wooden mold. This is how “oshi-zushi”—a specialty unique to Osaka—is crafted.

It has its roots in “narezushi” from the Nara period and was popularly known as “hayazushi” during the Edo period. In the city of Osaka, it was further refined into the visually stunning hako-zushi.

Often called the “2-sun 6-bu kaiseki,” its appearance is truly like a work of art. Yet, it is by no means pretentious.

Take, for example, the conger eel oshi-zushi. The balance between the plump, grilled conger eel and the soft vinegared rice is exquisite—one bite will leave you breathless.

Unlike Tokyo-style nigiri, which is eaten immediately after being shaped, box sushi is meant to be eaten “after allowing the flavors to meld.” You wait just a little while, and in return, you savor it all the more deeply.

In your mouth, the toppings and vinegared rice become one, spreading quietly across your palate. I think this “gentle, lingering sensation” is what defines Osaka sushi.

The head chef hardly speaks

Standing behind the counter is the head chef. He says very little, and there’s a sense of inner strength in the way he silently and diligently crafts each piece of sushi. Paradoxically, his taciturn nature makes him seem all the more trustworthy.

It might seem a little intimidating to walk in at first glance, but don’t worry. The woman’s reassuring voice will put you at ease, and you’ll definitely want to come back.

At the counter sit seasoned regulars. Quietly, yet surely, they share the rhythm of this restaurant.

Take “Uemaki” Home as a Souvenir

“Uemaki” is another side of Fuku Sushi.

These tightly rolled thick sushi rolls are beautiful to look at and have a certain elegance. The texture of the vinegared rice and the aroma of the nori are unmistakably “the taste of Fuku Sushi.”

At night, office workers stepping out from the shopping district’s noren often stop by on a whim to buy one. It seems to have become a little tradition for them to head home with a premium roll in hand, saying to their families, “This is what we’re having tonight.”

This “dad’s souvenir” has been passed down in this way since the Showa era. The wrapper is filled with family conversations and the gentle scent of the night.
